Loaded Sweet Potato Fries

Inspired by the poutines of our Canadian neighbors to the north and the carne asada fries of our southwestern states, we’ve created a new meatless favorite :: Loaded Sweet Potato Fries :: with Walnut Burger of course! Perfect for a party or for a simple and satisfying dinner, these fries will knock your socks off.

Ingredients:
(makes 3-4 servings)
2 large sweet potatoes (cut into french fry-like strips)
Olive Oil
Sea Salt & Pepper
Garlic Powder
Paprika
2 Walnut Burger patties
1 Jalapeño (seeds removed and diced)

Preheat the oven to 400 degrees. Then, toss cut fries with some 1 tablespoon of olive oil, sea salt, pepper, and a dusting of paprika and garlic powder. Place on 2 cookie sheets, and place in the oven to bake. Check on them every 10 minutes to flip and rotate them.

While the fries bake, place a bit of coconut oil in a saucepan and add 2 Walnut Burgers – cook until the crumbles are browned with a little crispiness on the outside edges. When the fries are crispy (about 30-40 minutes), remove from oven and stack on plates. Top with the Walnut Burger crumbles and jalapeño. Serve with your favorite spicy mayo or tahini sauce.
