Mikaela of Ruth&Ragnar, and her daughter Milou entered our #GoNuts for Meatless Monday Recipe Contest and were selected as a Runner Up! As Mikaela tells us :: “This recipe is perfect for picky toddlers as you can ‘hide’ some lovely dark greens like kale and spinach inside the pancake mixture. The amazing cheesy walnut burger flavor is loved by every kid I have served this to. AND the recipe is so easy, it’s a great one to cook together with your kids. My three-year old made this one all by herself!”
Ingredients:
1 egg
1 cup flour
2 cups milk
1 teaspoon brown sugar
1 pinch of salt
1 cup shredded vegetable of choice (for this recipe, zucchini and carrot was used)
1 Walnut Burger patty (crumbled)
Butter (for pan)
Mix egg, flour, milk, salt and sugar in a large bowl until smooth. Add shredded vegetables and stir. Melt a teaspoon of butter in a frying pan at high heat. Add 1/2 of pancake mixture, wait 30 seconds or until mix is no longer wet at the top, flip over. Leave pancake for about one minute before putting the pancake on a plate. Repeat until all mix is gone (approx 4-5 thin pancakes).
While the pancakes are cooling down, crumble a frozen walnut burger patty and add to the frying pan with some coconut oil (or any oil of your choice, coconut gives it a nice flavor). When cooked through, lay the Walnut Burger mix inside a flat pancake and roll it up. Sprinkle a bit of cheese on top and put it in the oven on broil until the cheese has melted (approx 3 minutes).
Voila! Ready to serve with a nice salad!
