Walnut Burger Shepherd’s Pie | Finalist

Sam :: an avid outdoor enthusiast :: entered our #GoNuts for Meatless Monday Recipe Contest and was selected as a Runner Up! Whether it be climbing mountains, whitewater rafting, or working with Ridge to Rivers Trail System, Sam loves to be outside. He also loves a good brew. Check out his recipe that pairs perfectly with an Idaho dark beer!

Ingredients:
2 Walnut Burgers
1 stalk celery
1 carrot
1/2 of an onion
1/2 cup corn
1 large Idaho russet potato
butter
garlic
cheddar cheese
salt & pepper to taste

Chop carrot, celery and onion into 1/4 inch cubes, and sauté together with some garlic in olive oil for about 5 minutes or until soft. Throw two Walnut Burger patties on top of the vegetable medley and continue to sauté together until Walnut Burger separates and mends together with vegetables; remove from heat and set aside.

Boil about 1/2 cup of corn; set aside. Cut up potato and boil until soft; make mashed potatoes to your liking, – Sam prefers some butter, cream, garlic and salt & pepper. Now, spread corn on top of Walnut Burger mixture, and then spread potato mixture on top of corn.

Lastly, grate some cheese on top of the potatoes, and bake for about 12-15 minutes. Broil for last minute or so to get a brown, crispier top. Shepherd’s pie cooks best in an 8 inch cast iron pan. Enjoy!
