RECIPE :: Loaded Sweet Potato Fries

Inspired by the poutines of our Canadian neighbors to the north and the carne asada fries of our southwestern states, we’ve created a new meatless favorite :: Loaded Sweet Potato Fries :: with Walnut Burger of course! Perfect for a party or for a simple and satisfying dinner, these fries will knock your socks off. Ingredients: (makes 3-4 servings) 2 large sweet potatoes (cut into french fry-like strips) Olive Oil Sea Salt & Pepper Garlic Powder Paprika 2 Walnut Burger patties 1 Jalapeño (seeds removed and diced) Preheat the oven to 400 degrees. Then, toss cut fries with some 1 tablespoon of olive oil, sea salt, pepper, and a dusting of paprika and garlic powder. Place on 2 cookie sheets, and place in the oven to bake. Check on them every 10 minutes to flip and rotate them. While the fries bake, place a bit of coconut oil in a saucepan and add 2 Walnut Burgers – cook until the crumbles are browned with a little crispiness on the outside edges. When the fries are crispy (about 30-40 minutes), remove from oven and stack on plates. Top with the Walnut Burger crumbles and jalapeño. RECIPE :: Walnut Burger Breakfast Stack

How did you start your #MeatlessMonday? For us, it was with a little twist on the typical breakfast sandwich. Basically, we dig Walnut Burgers so much, we ditched the muffin / bread and shifted our Walnut Burger to the outside of our morning sandwich…(which means we got 2 of them in our morning stack)! Ingredients: 1 package of Walnut Burgers (thawed, cut in half and re-pattied) 1 avocado (sliced) 2-4 eggs 2 tablespoons of green salsa Srirachi First, cut each thawed Walnut Burger in half, and repatty them. Then, place them on top of a parchment paper-lined cookie sheet and bake at 350 degrees for about 20 minutes or until golden brown. While the burgers bake, heat a bit of coconut oil in a saucepan and add 1 egg. As the egg starts to cook, add a quarter cup of water and a couple tablespoons of green salsa to the white part of the frying egg. Watch until yolk is how you like it, and then remove from pan. Repeat with as many eggs as desired. To build the sandwiches, place 1 Walnut Burger patty down, top with 1 egg, another Walnut Burger patty, and then avocado and a drizzle of Srirachi. RECIPE :: Walnut Burger Shepherd’s Pie

Sam :: an avid outdoor enthusiast :: entered our #GoNuts for Meatless Monday Recipe Contest and was selected as a Runner Up! Whether it be climbing mountains, whitewater rafting, or working with Ridge to Rivers Trail System, Sam loves to be outside. He also loves a good brew. Check out his recipe that pairs perfectly with an Idaho dark beer! Ingredients: 2 Walnut Burgers 1 stalk celery 1 carrot 1/2 of an onion 1/2 cup corn 1 large Idaho russet potato butter garlic cheddar cheese salt & pepper to taste Chop carrot, celery and onion into 1/4 inch cubes, and sauté together with some garlic in olive oil for about 5 minutes or until soft. Throw two Walnut Burger patties on top of the vegetable medley and continue to sauté together until Walnut Burger separates and mends together with vegetables; remove from heat and set aside. Boil about 1/2 cup of corn; set aside. Cut up potato and boil until soft; make mashed potatoes to your liking, – Sam prefers some butter, cream, garlic and salt & pepper. Now, spread corn on top of Walnut Burger mixture, and then spread potato mixture on top of corn. Lastly, grate some cheese on top of the potatoes, and bake for about 12-15 minutes. Broil for last minute or so to get a brown, crispier top. Shepherd’s pie cooks best in an 8 inch cast iron pan....

RECIPE :: Walnut Burger Enchiladas

Newlyweds Brittany and Brett entered our #GoNuts for Meatless Monday Recipe Contest and were selected as The Grand Prize Winners! As a graduate student studying nutrition, Brittany loves being in the kitchen and takes pride in serving up quality and flavorful combinations for those around her to enjoy. Try their Walnut Burger Enchiladas for a tasty Mexican twist on our #gonuts favorite :: Ingredients: Walnut Burger Enchiladas: 1 4-pack of Walnut Burgers 8 flour tortillas 1 bottle of red Trader Joe’s enchilada sauce (could use any sauce) 1 cup spinach, chopped 1 red bell pepper, diced 3 green onions, diced 1/3 cup red onion, diced 1 jalapeño, seeded and chopped 1 can black beans, drained and rinsed 1/2 cup of corn, frozen & cooked 1.5 cup of Trader Joe’s light shredded Mexican blend cheese 1 1/2 teaspoon cumin Juice from 1 lemon Cilantro Avo Jalapeño Sauce: 1 cup of cilantro 2 soft avocados 2 jalapeños, seeded and chopped 1 teaspoon cumin 1/2 teaspoon garlic powder 1/2 teaspoon red chili flakes (or to taste) 1 teaspoon apple cider vinegar Juice from 1 1/2 lemons Salt and pepper to taste (used about 1/2 tsp salt and 1 tsp pepper) Side of Greens: 10 stalks of broccolini, stems removed, cut into bite size pieces 1 package of Trader Joe’s Power Greens 3 garlic cloves, crushed 1/2 Tablespoon olive oil Walnut Burger Enchiladas: 1. Preheat oven to 350 degrees. 2. Slightly thaw Walnut Burgers (~15 minutes) and cut into small pieces, sauté to brown. Allow to cool. 3. Combine diced red pepper, red onion, green onion, drained and rinsed black beans, frozen corn, chopped jalapeño, chopped spinach, lemon juice, cumin, 1/2...

RECIPE :: Walnut Burger Crepes

Mikaela of Ruth&Ragnar, and her daughter Milou entered our #GoNuts for Meatless Monday Recipe Contest and were selected as a Runner Up! As Mikaela tells us :: “This recipe is perfect for picky toddlers as you can ‘hide’ some lovely dark greens like kale and spinach inside the pancake mixture. The amazing cheesy walnut burger flavor is loved by every kid I have served this to. AND the recipe is so easy, it’s a great one to cook together with your kids. My three-year old made this one all by herself!” Ingredients: 1 egg 1 cup flour 2 cups milk 1 teaspoon brown sugar 1 pinch of salt 1 cup shredded vegetable of choice (for this recipe, zucchini and carrot was used) 1 Walnut Burger patty (crumbled) Butter (for pan) Mix egg, flour, milk, salt and sugar in a large bowl until smooth. Add shredded vegetables and stir. Melt a teaspoon of butter in a frying pan at high heat. Add 1/2 of pancake mixture, wait 30 seconds or until mix is no longer wet at the top, flip over. Leave pancake for about one minute before putting the pancake on a plate. Repeat until all mix is gone (approx 4-5 thin pancakes). While the pancakes are cooling down, crumble a frozen walnut burger patty and add to the frying pan with some coconut oil (or any oil of your choice, coconut gives it a nice flavor). RECIPE :: Walnut Burger Sausage Pizza

There’s a key ingredient that is always part of the program when the Jenkins get together :: Mama J’s homemade pizza. And with our family, it’s always topped with Walnut Burger! When we crave time with the family clan, we undoubtedly crave this mouthwatering alternative to sausage. Try it on your favorite homemade or store-bought pizza! Ingredients: 4 thawed Walnut Burger patties 1/4 to 1/2 tsp red chili peppers 2 tablespoons roughly chopped fennel seed Mix red chili peppers and fennel in with Walnut Burger patties. Brown small “clumps” — resembling sausage — in a nonstick skillet, turning to make sure all sides are browned. Scatter the Walnut Burger crumbles over sauce on two large pizzas (if you’re making homemade pies). Then, put your favorite cheese on top. Bake at 500 degrees for 8 minutes; rotating top to bottom, and bake for approximately 7 more minutes or until crust is firm underneath. Buon Appetito! photos...

RECIPE :: Walnut Burger Lettuce Wraps

Our friend and photographer Drew came up with this fresh and healthy recipe. A modern twist on the lettuce wrap, these are a great starter before a meal of pad thai or pho. If you want to make them your main meal, there are enough for two to thoroughly enjoy. Ingredients: 1 teaspoon coconut oil 2 Walnut Burgers (crumbled and browned) 1/2 cup cooked quinoa 1 head of baby romaine lettuce 1/4 cup shredded carrots 1 avocado (sliced) Sriracha makes 8 lettuce wraps Heat coconut oil in a nonstick pan; crumble and brown 2 Walnut Burger patties over medium heat.
