Walnut Burger Breakfast Stack

How did you start your #MeatlessMonday? For us, it was with a little twist on the typical breakfast sandwich. Basically, we dig Walnut Burgers so much, we ditched the muffin / bread and shifted our Walnut Burger to the outside of our morning sandwich…(which means we got 2 of them in our morning stack)!

Ingredients:
1 package of Walnut Burgers (thawed, cut in half and re-pattied)
1 avocado (sliced)
2-4 eggs
2 tablespoons of green salsa
Srirachi

First, cut each thawed Walnut Burger in half, and repatty them. Then, place them on top of a parchment paper-lined cookie sheet and bake at 350 degrees for about 20 minutes or until golden brown.

While the burgers bake, heat a bit of coconut oil in a saucepan and add 1 egg. As the egg starts to cook, add a quarter cup of water and a couple tablespoons of green salsa to the white part of the frying egg. Watch until yolk is how you like it, and then remove from pan. Repeat with as many eggs as desired.

To build the sandwiches, place 1 Walnut Burger patty down, top with 1 egg, another Walnut Burger patty, and then avocado and a drizzle of Srirachi. Mmmm good.
