Sometimes, you need that extra pick-me-up in the morning. A protein-packed breakfast to get you going and take you into the day with extra energy. This one is the bomb, literally. My kind of Meatless Monday morning. Ingredients: makes 2 servings Olive oil 5 eggs (whipped with a fork) Salt & pepper 1/4 cup broccoli, diced 1/4 cup diced bell pepper Handful mixed greens 1 Walnut Burger (crumbled and browned) First, heat a saucepan over medium heat and add 1-2 tablespoons of olive oil. Next, add the broccoli and red pepper and cook until a bit of browning appears. While cooking the veggies, you can also crumble and brown the Walnut Burger patty in another saucepan. Once the veg mix is close to cooked, toss the greens in at the end just to wilt. Add the whipped eggs to an oiled pan to cook, adding some salt and pepper. Once the egg is slightly firm, not entirely cooked, add the veggies and Walnut Burger to the top of the egg layer; add the fillings on one side of the pan so it’s easier to fold the egg layer over the top. Fold over the egg layer and allow the omelette to cook a bit longer until the egg is slightly golden and the fillings meld with the outer egg layer. In the wintertime, warmer breakfasts always make our days start out happier. This protein-packed recipe helps give you the energy to get after it, especially on a Monday morning. Try these tacos next time you’re craving a little extra kickstart in the A.M.! Ingredients: makes 4 breakfast tacos 4 corn tortillas 5 eggs (scrambled) 3 baby peppers (diced) 2 frozen Walnut Burger patties 1 avocado (halved) Salsa (to taste) First, add a bit of coconut oil to a saucepan and add the diced peppers. Cook until they are slightly browned and softened; set aside. Next, scramble 5 eggs and add to a coconut-oiled saucepan. While the eggs are cooking, use another saucepan to cook each Walnut Burger, allowing them to cook until the cheese bubbles; then flip them to caramelize the other side. Then, stack your tacos. Place 1/2 Walnut Burger in each taco, top with peppers, scrambled eggs and your favorite salsa. We like to plate with a half avocado for color, and of course additional omega-3s. 🙂 Super...

How did you start your #MeatlessMonday? For us, it was with a little twist on the typical breakfast sandwich. Basically, we dig Walnut Burgers so much, we ditched the muffin / bread and shifted our Walnut Burger to the outside of our morning sandwich…(which means we got 2 of them in our morning stack)! Ingredients: 1 package of Walnut Burgers (thawed, cut in half and re-pattied) 1 avocado (sliced) 2-4 eggs 2 tablespoons of green salsa Srirachi First, cut each thawed Walnut Burger in half, and repatty them. Then, place them on top of a parchment paper-lined cookie sheet and bake at 350 degrees for about 20 minutes or until golden brown. While the burgers bake, heat a bit of coconut oil in a saucepan and add 1 egg. As the egg starts to cook, add a quarter cup of water and a couple tablespoons of green salsa to the white part of the frying egg. Watch until yolk is how you like it, and then remove from pan. Repeat with as many eggs as desired. To build the sandwiches, place 1 Walnut Burger patty down, top with 1 egg, another Walnut Burger patty, and then avocado and a drizzle of Srirachi. As Mikaela tells us :: “This recipe is perfect for picky toddlers as you can ‘hide’ some lovely dark greens like kale and spinach inside the pancake mixture. The amazing cheesy walnut burger flavor is loved by every kid I have served this to. AND the recipe is so easy, it’s a great one to cook together with your kids. My three-year old made this one all by herself!” Ingredients: 1 egg 1 cup flour 2 cups milk 1 teaspoon brown sugar 1 pinch of salt 1 cup shredded vegetable of choice (for this recipe, zucchini and carrot was used) 1 Walnut Burger patty (crumbled) Butter (for pan) Mix egg, flour, milk, salt and sugar in a large bowl until smooth. Add shredded vegetables and stir. Melt a teaspoon of butter in a frying pan at high heat. Add 1/2 of pancake mixture, wait 30 seconds or until mix is no longer wet at the top, flip over. Leave pancake for about one minute before putting the pancake on a plate. Repeat until all mix is gone (approx 4-5 thin pancakes). While the pancakes are cooling down, crumble a frozen walnut burger patty and add to the frying pan with some coconut oil (or any oil of your choice, coconut gives it a nice flavor). Inspiration for this curious morning recipe popped up on our recent Pacific Northwest road trip. The perfect fuel for a day peddling around the San Juan Islands, a stroll through Bend along the Ale Trail, or a paddle board down the Boise River… Ingredients: Walnut Balls – 4 Walnut Burger Patties (thawed) Form each of the 4 patties into 3 Walnut Balls, place them on a parchment paper lined cookie sheet, and bake them at 325 degrees. For the best browning, bake them for 15 minutes :: rotate :: 15 more minutes :: rotate :: 3 minutes :: rotate :: 3 more minutes, and then they should be done. Savory Oatmeal – ¼ cup pine nuts or walnuts 2 teaspoons fennel seed 3 cups water 1 cup whole milk 2 tablespoons butter ½ teaspoon salt ½ cup golden raisins 1 cup steel-cut oats 2 small sprigs of rosemary, stripped and chopped Honey to taste In a medium pot, toast the nuts and fennel seed and remove them to a plate. Add water, milk, butter, salt, golden raisins, and rosemary. Stir and bring to a simmer. Add oats and simmer for 20 minutes or until oats are tender. Add toasted nuts and fennel. *If using rolled oats, use ½ cup milk and 1 ½ cups water and cook for 8-10 minutes. Top your savory oatmeal with a couple walnut balls and a drizzle of local bee nectar!
